Dill Pickle Slaw

Dill Pickle Slaw kicks up your coleslaw game, and goes great with just about any summer meal - especially grilled ones! This creamy coleslaw is dressed with dill pickle brine, and the bright dill flavor is amped up with chopped fresh dill. Bratwurst, BBQ, fish - this Dill Pickle Slaw complements all of them.

Use your favorite dill pickle in this recipe. Kosher dills, zesty dills, homemade pickles, spears or chips - whatever is in your fridge! Chop them up, and use the brine in the dressing. Toss the pickles with thinly sliced cabbage, shredded carrots, and fresh dill, and you’ve got a cool summer side dish for your next BBQ or picnic.

Assemble your ingredients.

Whisk up the dressing, then pour it over prepared vegetables
Whisk up the dressing in the bottom of a large bowl. Add the prepared vegetables, and toss until everything is well coated.

Ingredients

1/2 cup mayonnaise

3 Tbsp. dill pickle brine

1 tsp. granulated sugar

1/4 tsp. kosher salt

1/4 tsp. ground black pepper

1/2 medium head of cabbage, very thinly sliced

1 cup shredded carrots

1 cup chopped dill pickles

1/2 cup chopped fresh dill

Instructions

  1. In a large bowl, prepare the dressing. Whisk together mayonnaise, pickle brine, sugar, salt, and pepper.
  2. Add thinly sliced cabbage, shredded carrots, chopped pickles, and chopped dill to the large bowl with the dressing. Toss to combine, until everything is evenly coated in the dressing.
  3. Refrigerate prepared slaw for up to 3 hours before serving. Store leftovers in the refrigerator for an additional day.
  4. Serve Dill Pickle Slaw with your favorite grilled brats or BBQ!
