Golden Spice Granola

I spent a long time thinking about the first recipe that would appear on my blog, and this one kept coming back to the top of my list. So, just like we would start any day with breakfast, let's launch this page with one of my favorite breakfast items!

I started making my own granola when I discovered wheat products hidden in many conventional, store-bought granolas (I'm not gluten-free, but I cook for someone who is). As I read more and more labels, I also realized that store-bought granolas are loaded with added sugars that just aren't necessary to make a great-tasting granola.

I love pairing this versatile granola simply with Greek yogurt and fruit for breakfast, or even as a snack. You can add any combination of fresh fruits you like to boost the nutritional value - whole fruits are great sources of antioxidants and fiber. Another serving option that I love, especially in the fall and winter, is to put this granola on top of cooked, mashed sweet potatoes. It's a hearty and warming breakfast during the colder months. And in the summer months, this granola brightens up fresh fruit and yogurt with with its sunny yellow color!

After baking, let your granola cool on the baking sheet to cool off and crisp up.

Golden Spice Granola

Homemade granola meets golden milk latte in this sweet and spicy combination.

Ingredients

3 cups rolled oats

1 Tbsp. ground turmeric powder

1 tsp. ground ginger

1 tsp. cinnamon

1/2 tsp. salt

1/2 tsp. black pepper

1 cup raw sliced almonds

1 cup unsweetened coconut flakes

¼ cup coconut oil, melted

⅓ cup pure maple syrup

2 tsp. pure vanilla extract

Instructions

  1. Preheat oven to 350 degrees F. Line a large rimmed baking sheet with parchment paper or silicone baking mat, and set aside.
  2. In a large mixing bowl add the oats, turmeric, ginger, cinnamon, salt, black pepper, almonds, and coconut flakes. Stir to combine.
  3. Add the coconut oil, maple syrup, and vanilla extract to the dry ingredients, and stir until everything is combined.
  4. Transfer the granola mixture to the prepared baking sheet. Spread out into an even layer. Bake for 20 to 25 minutes, stirring once halfway through.
  5. Allow the granola to cool on the baking sheet, which will help it become crisp and crunchy.
  6. Store in air tight container at room temperature for up to 10 days.
