Sweet Chili Tuna Melts

Sweet Chili Tuna Melts are a twist on a comfort-food classic, and an easy weeknight dinner for any time of the year. 

My family loves tuna melts. It’s been an easy, go-to weeknight dinner most of my life. My childhood version was definitely topped with slices of good old American cheese and often used up whatever stray bread we had on hand (hamburger buns, hot dog buns, English muffins, whatever needed to be used). Over the years, they evolved to sometimes include fresh sliced tomatoes (especially in the summer) and less processed cheese. 

For the past few years, I’ve been turning anything and everything tuna into creations inspired by spicy tuna sushi rolls. Tuna and sweet chili sauce are a flavor pairing dream. Salty, briny tuna fish with sweet, spicy chili sauce plus creamy mayonnaise - give it to me any day. So naturally, I had see how it worked as a tuna melt. 

Let me tell you - it worked out better than I could have dreamed. Crispy English muffins topped with a sweet chili tuna spread, followed by melty havarti cheese, then topped with cool, creamy avocado and toasted sesame seeds - it’s a new comfort classic in my house. These Sweet Chili Tuna Melts have been on repeat, not just because I’ve been testing the recipe and shooting the pictures. Make these for dinner as soon as you can!

Toast the English muffins, then top with tuna mixture, followed by havarti cheese. Broil until the cheese is melted and golden. Top with Sliced avocado and additional toasted sesame seeds.

Ingredients

14 oz. chunk light tuna, in water, drained

1/2 cup mayonnaise

3 Tbsp. sweet chili sauce

1-2 tsp. sriracha (depending on your preferred spice level)

1/2 tsp. toasted sesame oil

3 green onions, white and light green parts, thinly sliced

1 Tbsp. toasted sesame seeds

4 English muffins, split

4 slices havarti cheese

2 small avocados, peeled, sliced

Additional toasted sesame seeds or Gomasio, for garnish

Instructions

  1. Start by making the sweet chili tuna mixture. In a medium bowl, combine tuna, mayonnaise, sweet chili sauce, sriracha, toasted sesame oil, sliced green onions, and sesame seeds. Mix until well combined. Set aside. 
  2. Toast the English muffin halves in a toaster or under a broiler until lightly golden brown. (I like to toast the muffins before topping them, because I think it helps prevent them from becoming soggy!) Arrange the toasted English muffin halves on a large baking sheet. 
  3. Top each English muffin half with a generous spoonful of the tuna mixture, evenly dividing the tuna mixture among the 8 muffin halves. 
  4. Place half a slice of havarti cheese on top of each tuna-topped English muffin. 
  5. Place the assembled tuna melts under a low broiler for 8-10 minutes, until cheese is melted. Finish broiling on high for another minute or two, until cheese is golden. Remove the tuna melts from the oven. 
  6. Top each tuna melt with several slices of avocado, and then sprinkle with sesame seeds or Gomasio. 
  7. Serve immediately, and enjoy!
