Watermelon Wedge Salads with Feta, Mint, and Pistachios

These Watermelon Wedge Salads with Feta, Mint, and Pistachios are both the most incredibly refreshing and incredibly gorgeous dish you can make for a summer party!

It took a long time for summer to appear in the Pacific Northwest this year, but now that it’s here, watermelon is on repeat for me. I could eat plain, fresh, cold watermelon all day, every day, all summer long. Juicy, sweet, refreshing - what’s not to love?! But sometimes it’s fun to mix things up a bit, including a summertime classic like watermelon. 

Enter Watermelon Wedge Salads with Feta, Mint, and Pistachios. These take watermelon to the next level, adding salty, creamy, and crunchy toppings that somehow make each bite even more refreshing! Each watermelon wedge is spread with a little honey-sweetened Greek yogurt, then topped with crumbled feta cheese, chopped pistachios, and thinly sliced mint leaves. Ohmigoodness. The creamy-salty-juicy-crunchy-herby combo is just so good!

Make Watermelon Wedge Salads with Feta, Mint, and Pistachios for your next summer gathering. They would be equally appropriate at an elegant summer dinner party as they would be as a poolside snack. Watermelon Wedge Salads with Feta, Mint, and Pistachios

Ingredients

1 mini seedless watermelon, chilled 

1 cup plain Greek yogurt

2 Tbsp. honey

1/2 cup crumbled feta cheese

1/4 cup finely chopped pistachios

3 Tbsp. julienned mint leaves

Instructions

  1. Start by combining the yogurt and honey in a medium bowl, and stirring until honey is incorporated. Set aside. 
  2. Cut watermelon into quarters, then cut the quarters into 1-inch thick slices. 
  3. Arrange the watermelon slices on a large serving platter. Assemble the watermelon wedge salads as follows: Carefully spread a small spoonful of the honey yogurt mixture on each wedge. Then, sprinkle each wedge with chopped pistachios. Next, sprinkle each wedge with crumbled feta. Finally, scatter a few thin slices of mint leaves on each wedge. 
  4. Serve assembled Watermelon Wedge Salads immediately. Or, refrigerate for up to two hours.
