Ingredients

6 cups old-fashioned oats

1 Tbsp. ground cinnamon

2 tsp. baking powder

1/2 tsp. kosher salt

1 stick (8 Tbsp.) unsalted butter, melted and cooled slightly

2 cups milk (dairy or plant-based)

4 large eggs

2/3 cup packed brown sugar

1 Tbsp. vanilla extract

1 1/2 cups whole-berry cranberry sauce

1/2 cup chopped pecans

Instructions

  1. Preheat oven to 350 degrees F. Lightly grease a 9x13-inch baking dish, and set aside. 
  2. In a large mixing bowl, combine dry ingredients: oats, cinnamon, baking powder, and salt. Stir to combine. Set aside. 
  3. In a medium mixing bowl, combine wet ingredients: melted butter, milk, eggs, brown sugar, and vanilla extract. Whisk until well combined. 
  4. Add wet ingredients to dry ingredients and stir until everything is evenly moistened. 
  5. Pour 3/4 of the oat mixture into the prepared baking dish, spreading until one even layer. 
  6. Gently place spoonfuls of cranberry sauce over the oat mixture in the baking dish, spreading them out until the oat mixture is evenly coated. 
  7. To the remaining 1/4 of oat mixture in the mixing bowl, add the chopped pecans and stir until incorporated. Scatter the remaining mixture over the cranberry layer, leaving cranberry visible here and there. 
  8. Bake the assembled oatmeal at 350 degrees F for 40-45 minutes, until set and golden brown. 
  9. Serve warm! Optionally, top your portion of baked oatmeal with a drizzle of milk or cream.
