Smoked Salmon Frittata

This Smoked Salmon Frittata could also be called “Everything-but-the-bagel” frittata - smoked salmon, red onion, spinach, tangy cheese, and everything bagel seasoning enveloped in fluffy eggs - it’s all here, except for the bagel!

Ingredients

8 eggs

1/2 cup milk

1/2 tsp. kosher salt

1/2 tsp. ground black pepper 

1 Tbsp. ghee (or butter)

1 small red onion, thinly sliced

2 cups chopped fresh spinach

1/2 pound hot-smoked salmon, flaked into large chunks

1 cup crumbled feta cheese

1 Tbsp. everything bagel seasoning

Instructions

  1. Preheat oven to 400 degrees F. 
  2. In a large bowl, whisk together eggs, milk, salt, and pepper. Set aside. 
  3. In a large, oven-safe skillet over medium heat, heat the ghee (or butter). Add thinly sliced red onion and saute until just translucent, about 4-5 minutes. 
  4. Add chopped spinach and saute until just beginning to wilt, about one minute. Turn off the heat.
  5. Pour egg mixture over the sautéed vegetables in the large skillet. 
  6. Scatter smoked salmon chunks evenly over the egg and vegetables. Scatter crumbled feta evenly on top. 
  7. Transfer the skillet to the preheated oven and bake for 18-20 minutes, until the frittata is puffed and the eggs are set in the center. 
  8. Remove from the oven and immediately sprinkle with the everything bagel seasoning. 
  9. Cut into wedges and serve. Enjoy!
