Loaded Roasted Potatoes

These Loaded Roasted Potatoes are my favorite grilling side dish of the summer! They pair perfectly with just about any main course you might throw on the grill - chicken, fish, steak, burgers, sausages. Loaded Roasted Potatoes can also be made in an oven, but as long as the weather is hot, avoid heating up the kitchen and take these outside! 

These roasted potatoes are loaded with flavor thanks to seasoning salt, smokehouse-style almonds, sharp cheddar cheese, and fresh chives. Finished with creamy, cool sour cream, these are the ultimate loaded potatoes. In fact, my brother dubbed them the best potatoes he’s ever had!

Smokehouse-style almonds are my plant-based alternative to bacon bits. I love to chop them up for topping baked potatoes, creamy chowders, salads - anywhere you would put crispy, crumbled bacon. They have that smoky, salty flavor and perfect crunch, and make a great plant-based substitute!

Assemble your ingredients.

Tossing diced potatoes in oil and spices, then transferring to a baking sheet
Dice potatoes, toss them with oil and spices, then arrange in one even layer on a large rimmed baking sheet.

Roast the potatoes in an oven or on the grill until tender inside and just beginning to crisp on the outside. Top with chopped smoky almonds and cheddar cheese, and return to the heat for 10 minutes to melt the cheese.

Top the potatoes with minced fresh chives and sour cream, and serve immediately.

Ingredients

3 pounds baby red potatoes

2 Tbsp. avocado oil

1 1/2 tsp. seasoning salt (or plain kosher salt)

1/2 tsp. ground black pepper

3/4 cup chopped smokehouse-style almonds

2 cups grated sharp cheddar cheese

1/2 cup minced fresh chives

1/2 cup sour cream (or plain Greek yogurt)

Instructions

  1. Preheat an oven (or outdoor grill) to 425 degrees F. 
  2. Dice potatoes into 3/4-inch cubes and place in a large bowl. Toss diced potatoes with avocado oil, seasoning salt, and pepper until evenly coated. Transfer potatoes to a large rimmed sheet pan and distribute them into one even layer.
  3. Roast potatoes at 425 degrees F for 45 minutes (they should be soft in the center, and beginning to crisp around the edges). 
  4. Remove sheet pan from oven (or grill), and top potatoes with chopped smoky almonds and grated sharp cheddar cheese. Return sheet pan to oven (or grill) for an additional 10 minutes to melt the cheese. 
  5. Remove the potatoes from the oven (or grill) and sprinkle minced chives evenly over the sheet pan. Dollop or squirt sour cream (or Greek yogurt) evenly over the potato mixture.
  6. Serve immediately, and enjoy!
