Sunshine Smoothie Bowls

Make these bright yellow Sunshine Smoothie Bowls on the days that you just need to create your own sunshine!

A few years ago, I picked up car air fresheners that say “Some days you just have to create your own sunshine.” There’s been one hanging from my rear-view mirror ever since. I was drawn to the phrase because my name, Kira, means “sunshine.” I really like my name, and I do try to embody its meaning and be sunshine and light wherever I go. And sometimes, it’s helpful to have the reminder. Some days, you do have to create your own sunshine. Or be someone else’s sunshine. Especially lately, when so much in the world feels so heavy and dark, it’s important to remember that it’s okay to put some distance between you and the weight of the world. Crack things open and let some light in. 

Bring some light into your day with these Sunshine Smoothie Bowls! They are so vibrant yellow, it’s hard not to smile just a little when you see them, right? Their brilliant yellow hue comes from delicious yellow foods, including pineapple, mango, oranges, turmeric, and a secret ingredient…golden beets! Yes - beets in a smoothie! The golden beets enhance the color of the smoothie, but also give it a light, earthy flavor that feels very grounding. The beets and turmeric complement each other nicely in that rich earthiness. The fruit balances everything out by adding sweetness, and by using full-fat coconut milk, the smoothie consistency is super light and airy. 

Top your smoothie bowl with your favorite combinations of granola, fresh fruits, nuts, and seeds. I kept it simple here, just adding a scoop of homemade granola. Or skip the bowl, and just sip on this yellow ray of sunshine straight from a glass! Next time you need to create your own sunshine, try this Sunshine Smoothie Bowl!

Sunshine Smoothie Bowls

Make these bright yellow Sunshine Smoothie Bowls on the days that you just need to create your own sunshine!

For the smoothie:

1 small golden beet, peeled and diced

1 cup frozen pineapple chunks

1 cup frozen mango chunks

1-inch fresh ginger, peeled

1 tsp. ground turmeric

14-oz. can full-fat coconut milk

1/2 cup orange juice

For topping:

Granola of your choice

Fresh fruit of your choice


  1. In a high-speed blender, combine diced golden beet, frozen pineapple and mango, ginger, turmeric, coconut milk, and orange juice. Blend until smooth. 
  2. Serve immediately. Pour smoothie into bowls and top with your choice of granola, nuts, seeds, and/or fresh fruit.
