Mediterranean-Inspired Salsa

This Mediterranean-inspired spin on tomato-based salsa is the summer snack you didn’t know you needed! Grab the pita chips and get to dipping!

Mediterranean-Inspired Salsa is really inspired by my favorite pizza place in college. La Fiamma Wood Fired Pizza is located in downtown Bellingham, and for several years, it was on my walk home from the local bus station. I popped in regularly to purchase their pizza dough to make pizza at home, along with a large cup to-go of their rosemary lemonade (which I’ve also tried to recreate!). If I was dining in, I for sure had to order this Mediterranean-Inspired Salsa as an appetizer. 

This Mediterranean-Inspired Salsa begins with a base of canned tomatoes - yes, canned, not fresh. The flavor and texture of the cooked tomatoes is perfect here. To the tomatoes, you add cucumber, kalamata olives, red onion, fresh parsley, olive oil, red wine vinegar, and feta cheese. I also like to add a good tablespoon of capers for extra salty, briny flavor, but I know some people feel strongly against capers, so leave them out if you prefer. Once everything is stirred all together, just grab some pita chips and dive in! 

The flavors definitely improve after several hours, if you can wait that long, but the salsa also begins to release a lot of liquid the longer it sits. Draining the canned tomatoes very well is essential to minimizing the excess liquid in this recipe.

Ingredients

1 28-oz. can petite diced tomatoes (no salt added or low sodium)

1/2 cup finely diced English cucumber

1/2 cup finely diced kalamata olives

1/4 cup finely diced red onion

1/4 cup minced fresh Italian parsley leaves

1 Tbsp. capers

1 Tbsp. extra-virgin olive oil

1 Tbsp. red wine vinegar

1/2 cup crumbled feta cheese


Pita wedges or pita chips, for serving

Instructions

  1. Start by draining the liquid from the can of diced tomatoes. (Tip: Pour the tomatoes into a strainer and let stand over a bowl to catch the liquid while you prep all the other ingredients for the salsa. Tip 2: Reduce food waste by reserving the liquid for future use in a soup, juice, sauce, or cocktail!)
  2. In a large bowl, combine the well-drained tomatoes, finely diced cucumber, olives, red onion, minced parsley, capers, olive oil, and red wine vinegar. Toss until combined. 
  3. Gently fold the crumbled feta cheese into the vegetable mixture. 
  4. Serve immediately, with fresh pita wedges or pita chips for dipping. Refrigerate leftovers up to 5 days. (Note that the salsa will release a lot of excess liquid the longer it sits.) This salsa also makes a delicious topping for grilled fish or chicken!
