Vegan Avocado Ranch Dip

Vegan Avocado Ranch Dip is an easy way to add healthy fat and protein to any snack. It’s the perfect dip for veggies, crackers, chips, or your favorite chicken nuggets!

A good dip is high on my list of weekly meal prep, because they can be used for so many things. This Vegan Avocado Ranch is the perfect case in point. Use it to dip veggies, crackers, chips, nuggets, or dress a salad - the possibilities are infinite. I mean, c’mon - there aren’t many foods that aren’t enhanced by ranch dressing. This Vegan Avocado Ranch is a perfect meal prep dip because it keeps very well in the refrigerator. Despite the avocado, it does not change color! It stays green and vibrant for up to several days.

This avocado ranch packs a nutritional punch of protein thanks to the silken tofu base, along with fiber thanks to the avocado and herbs, and a good healthy fat in the avocado. My favorite trifecta for meals and snacks - protein, fat, and fiber. Blend this Vegan Avocado Ranch up as soon as possible, and get to dipping!

Ingredients

12 ounces silken tofu

2 small or 1 large ripe avocado, peeled, pitted

2 cloves garlic, peeled, smashed 

Juice of 1 large lemon

1/4 cup fresh chives, roughly chopped, loosely packed

1/4 cup fresh flat-leaf parsley, roughly chopped, loosely packed

1 Tbsp. nutritional yeast 

1 1/4 tsp. kosher salt

1/2 tsp. ground black pepper

Instructions

  1. Add all ingredients to a high-speed blender or food processor. Process on low until incorporated, then blend on medium to medium-high speed until pureed and smooth.
  2. Transfer dip to an air-tight container and store in the refrigerator until ready to serve, up to 5 days. 
  3. Serve Vegan Avocado Ranch Dip with your favorite veggies, crackers, chips, or chicken nuggets!
