Cranberry Sauce Baked Oatmeal

Got holiday leftovers? Do they include cranberry sauce? Then you’re ready to make Cranberry Sauce Baked Oatmeal for breakfast! Perfect for a crowd or easy meal prep following your holiday gatherings. 

Someone on my social media feed recently shared that they like baked oatmeal more than traditional oatmeal, and you know what? I agree. (Except for my Cheesy Oatmeal…that’s definitely my very favorite oatmeal.) Baked oatmeal is almost like eating cake for breakfast, and who doesn’t think that sounds fun?! They make a great make-ahead breakfast, and this one definitely feeds a crowd or stretches through the whole week. 

My favorite way to enjoy baked oatmeal is reheated and drizzled with milk or cream. A dollop of plain yogurt is also a great topping! I also wouldn’t argue with you if you put some whipped cream on this Cranberry Sauce Baked Oatmeal (because if you’re like me, you’ve probably got whipped cream left from the dessert table…)

Assemble your ingredients.

Mixing dry ingredients, then wet ingredients, then bringing them together
Combine the dry ingredients and wet ingredients separately, and then bring them together. Tip: Whisk the eggs first, before adding the other wet ingredients.

Evenly spread 3/4 of the oat mixture in a baking dish. Top with cranberry sauce. Add chopped pecans to the remaining oat mixture, and then distribute evenly over the cranberry layer.

Ingredients

6 cups old-fashioned oats

1 Tbsp. ground cinnamon

2 tsp. baking powder

1/2 tsp. kosher salt

1 stick (8 Tbsp.) unsalted butter, melted and cooled slightly

2 cups milk (dairy or plant-based)

4 large eggs

2/3 cup packed brown sugar

1 Tbsp. vanilla extract

1 1/2 cups whole-berry cranberry sauce

1/2 cup chopped pecans

Instructions

  1. Preheat oven to 350 degrees F. Lightly grease a 9x13-inch baking dish, and set aside. 
  2. In a large mixing bowl, combine dry ingredients: oats, cinnamon, baking powder, and salt. Stir to combine. Set aside. 
  3. In a medium mixing bowl, combine wet ingredients: melted butter, milk, eggs, brown sugar, and vanilla extract. Whisk until well combined. 
  4. Add wet ingredients to dry ingredients and stir until everything is evenly moistened. 
  5. Pour 3/4 of the oat mixture into the prepared baking dish, spreading until one even layer. 
  6. Gently place spoonfuls of cranberry sauce over the oat mixture in the baking dish, spreading them out until the oat mixture is evenly coated. 
  7. To the remaining 1/4 of oat mixture in the mixing bowl, add the chopped pecans and stir until incorporated. Scatter the remaining mixture over the cranberry layer, leaving cranberry visible here and there. 
  8. Bake the assembled oatmeal at 350 degrees F for 40-45 minutes, until set and golden brown. 
  9. Serve warm! Optionally, top your portion of baked oatmeal with a drizzle of milk or cream.
