Orange Chocolate Chia-Flax Pudding

Orange Chocolate Chia-Flax Pudding is a perfect February dessert - take advantage of citrus season with fresh orange flavor, while indulging in rich cocoa, all while enjoying the benefits of healthy fats and fiber!

Chia-flax pudding is almost too good to be true. How do these two tiny seeds combine with coconut milk to make a pudding texture that’s actually more like mousse? Seriously - these puddings are light and creamy, and loaded with flavor. It’s just an added bonus that they’re packed with heart-healthy fats, antioxidants, and fiber, making them not just good, but good for you.

As a nutritionist, I know the benefits of chia seeds and flax seeds, but I’m not always great at incorporating them into my regular meals. But when these little jars of pudding are in the fridge? Hold me back! They’re also a great way to get my family to eat more of these little nutrient-dense seeds, because honestly if I didn’t tell them what was in these homemade pudding cups, they would never guess. 

These Orange Chocolate Chia-Flax Puddings are a winter variation on my Spiced Cocoa Chia-Flax Puddings from a couple years ago. I love the pairing of orange and chocolate, so I knew I had to take advantage of the beautiful fresh citrus in season during the winter to create a new spin on this easy recipe. These homemade pudding cups could not be any easier to whip up - just combine all the ingredients in one bowl, and then portion into small mason jars to store in the refrigerator. Orange Chocolate Chia-Flax Puddings are a delightful snack or dessert!

Add all the ingredients to a bowl and stir until combined
This recipe could not be any easier to make! Just combine all the ingredients in a bowl and stir together until well mixed.

Portion the pudding mixture into small bowls or jars, cover and refrigerate until set, about 4 hours. I like to use 4-ounce mason jars with lids.

Ingredients

1/4 cup chia seeds

1/4 cup flax meal 

1/4 cup cacao powder

14 oz. can full-fat coconut milk

4 Tbsp. pure maple syrup

2 tsp. vanilla extract

1/4 tsp. sea salt

1/4 tsp. ground cardamom

Zest and juice of 1 medium-large navel orange

Instructions

  1. Place all ingredients in a large mixing bowl, and whisk to combine until smooth. 
  2. Portion mixture into 4-6 small dishes or jars for serving. 
  3. Cover and refrigerate 4-6 hours minimum, or up to overnight (until it thickens and has a pudding-like texture). 
  4. Serve filled pudding topped with whipped cream or coconut whip and/or shaved chocolate (optional).
  5. Store any leftover pudding in the refrigerator for up to 3 days.
