This BBQ Vinaigrette Summer Slaw is a super simple side dish to pair with anything you throw on the grill this season.
This salad is so easy to throw together for a quick side dish on weeknights or to bring along to a summer party. The kale and cabbage are sturdy greens, so it holds up well to preparing in advance and/or travel, whatever you need!
The BBQ Vinaigrette comes together using your favorite barbecue sauce - whatever you’ve got in your fridge; I know we’ve all got a favorite. You can whisk it in a bowl or shake it up in a mason jar. Be sure to taste for a balance of flavors - like a good barbecue sauce, the dressing should be tangy and sweet, so you might need to adjust the vinegar and mustard amount just a bit. If you use a sugar-free barbecue sauce, you might need to add a teaspoon of maple syrup to bring the flavors into harmony. Just taste and adjust to your preferences!
This slaw is super crunchy and refreshing, too. The hearty kale and cabbage are crisp, the red onion adds more juicy bites, and the chopped smokehouse almonds add a toasted crunch to round out the textural experience. Everything is coated in tangy, sharp BBQ Vinaigrette to add salty, sweet, sour, and umami to the bitter greens - all five tastes!

For vinaigrette:
1/3 cup barbecue sauce (your favorite)
1/4 cup avocado oil
1 Tbsp. apple cider vinegar
1 tsp. dijon mustard
For salad:
1 bunch lacinato kale, chiffonade
1 bag coleslaw mix (shredded green and red cabbages, carrots; see notes)
1/2 red onion, thinly sliced
1/2 cup smokehouse-style almonds, roughly chopped
Notes:
- Look for a coleslaw mix that’s just the prepped veggies, not a kit - you don’t need any dressing included, because you’re going to make your own!
